WTFood Homemade Ortega Hummus

Needed a snack before dinner, so I figured hummus would go great along with my glass of wine.  It was ridiculously easy to make and is delicious!

Take out your Magic Bullet or food processor and pour in:

  • 1 can of no salt added garbanzo beans
  • 1 can of Ortega chiles
  • 1/4 cup of olive oil

Before blending, top it off with:

  • A pinch of garlic salt
  • 1 teaspoon of cumin
  • Squeeze half a lime
  • 5 garlic cloves

Blend together and then spoon into a bowl and enjoy!

The beans add the protein and the olive oil adds the healthy fats!  A little goes a long way and will sure curb your appetite.  This recipe makes 3 servings:

WTFood Tasty Chicken Meals

I can’t believe it’s been over a month since my last post.  Time just flies when you’re having fun!  I lived it up and really enjoyed the last month of college, which I can’t wait to share with you.  But first,  I was just going through my phone and Instagram and also realized though that I made lot’s of tasty, healthy chicken meals.  So here are a few of my favorite!

This was one of my favorites because I discovered this fresh pesto marinade at the Food Expo West.  It was wonderful meeting the owners of the new gourmet sauce line, Le Grand.  The sauces are made with high-quality, healthy and fresh ingredients.  The company is based in Canada and isn’t available in the US yet.  I loved this pesto sauce and finished the pack in less than a week.  Crossing my fingers, they start selling in SoCal soon!

WTFood You Say Buffalo, I Say Bison!

My close friends, roommates and family can all agree that I have a food obsession with bison.  I’m such a huge fan and bison advocate that aside from attending a marketing conference with my dad in Atlanta last year, I also flew there to eat at Ted’s Montana Grill—Ted Turner’s own restaurant that primarily sells bison.  It was delicious—I highly recommend it!

I can’t pinpoint the exact catalyst that made me switch over to bison, but what I can say is that bison meat is the best way to go for red meat protein in your diet.  I hope you are reading this Ted….I’m open to discuss a spokesperson position for promoting bison in the American diet. ;) Mr. Turner is actually the 2nd largest individual landowner in North America consisting of personal land and ranches that manage bison head.

This leads me to my next point about the difference between buffalo and bison, since they are so frequently interchanged—a common misnomer.  Yes, bison and buffalo belong to the same family, but they are actually different and roam on different continents.  “True” buffalo- the African or Cape buffalo and the Asian Water Buffalo are native to Africa and Asia and are still even distinctly different.

The bison that you find on menus and in butcher shops is native to North America.  So, why are they so often called buffalo?  Historians think that when the European explorers came across this unknown animal they could only relate it to the buffalo they were familiar with across the pond and called them “les bouefs,” which eventually led to “buffalo.”

But, I digress….The reason I’m so crazy about bison is because of its nutritional benefits.  Take a look at this chart below….it blows beef out of the water in every category.  It is leaner—less fat, has more protein and nutrients and less calories and cholesterol than beef.  Additionally, bison is grass-fed and subject to strict guidelines by the National Bison Association (NBA).  Bison isn’t injected with hormones, antibiotics, steroids, additives or tenderizing ingredients, which makes it an all-natural meat.

Bison is the perfect body building meat and has come to be known as the “muscle mass meat” in the fitness industry because of its balanced nutritional profile.  If your goals are to lean out and tone up, then I highly suggest you start eating bison instead of regular beef.  It’s high in Omega-3’s, has 70% more iron than regular beef, and is high in CLA—a fatty acid that promotes fat loss and building lean muscle mass.  And if you’re concerned about taste…well, you really can’t tell the difference…I’ll be posting one of my bison recipes soon!  Until then, you can find bison meat at your local Whole Foods, local health food retailer and a popular option—online!

WTFuel Entrepreneurial Spotlight- Lorna Jane: Move. Nourish. Believe.

WTFashion: So I randomly came across the Australian brand, Lorna Jane Activewear a few weeks ago and talk about timing- they just opened their first US store in Malibu!  They have been the leader in activewear in Australia for about 20 years and their expansion into the US will take them to the next level as an international fitness apparel and sportswear brand!

WTFuel: Besides falling in love with their brand, I have to say that I fell in love with Lorna Jane and her entrepreneurial journey.  It’s so easy to look at successful people and entrepreneurs today and look past all of their hard work, sweat, tenacity and perseverance and just see them at the top, but there was a challenging road they took to get to where they are today.

Lorna Jane wrote her book – Move, Nourish, Believe to share her story behind the brand and to inspire others to live healthy, active lifestyles.

“Do what you have to do to be what you want to be.”

Lorna is a self-made entrepreneur and the beginnings of her company started when she began sewing leotards to wear to her fitness classes.  They caught the attention of the other women in the class and so one day she decided to take a leap, quit her job, and start this business.  Her story is very inspirational.  In her book, she talks about setting goals-personal, fitness, and professional.  She gives her own fitness and lifestyle tips and also shares her nutritional diet and healthy recipes for every season of the year!

The Lorna Jane brand is very empowering and optimistic–a reflection of Lorna Jane herself.

She writes with confidence, “I’m here to tell you that if you work hard enough, absolutely anything is possible.  To get to where you want to go, you simply need to commit yourself to the finish line, and then work backwards, setting more realistic goals to celebrate along the way.”

I cannot agree more.  Many successful entrepreneurs I’ve had the honor of hearing speak or interviewing myself have given me the same advice.  My parents instilled this mantra in me at a young age, and I, too, through my successes thus far believe you can do anything you set your mind to if work your ass off every step of the way to get there.

Lorna has grown her company one sports bra at a time.  I’d be honored to meet her one day- her optimism, positivity and love for life exude through the pages of her book and I’m sure she’s even more radiant and inspiring in person!

WTFood Spaghetti Squash

Spaghetti what?  Yup, that’s what I said last summer before I tried this veggie that is the perfect substitute for all of you pasta-carb lovers out there!  My recipe has been quite the hit with my roomies, so I wanted to share it with you, too.  Alright so to clear any confusion….yes, spaghetti squash is a vegetable and no, it is not pasta that comes in a box…. ;)   It looks like this little guy….

I recently tried this spaghetti squash dish at The Farm of Beverly Hills at L.A. Live, but step aside The Farm…..you’ve got nothing on mine!

Here’s the recipe…I usually add ground bison to make a mean and lean meat sauce and eat it in a bowl, but I decided to pair it with a fresh Wild Caught Salmon Fillet.

For the Salmon:

  • Drizzle 1 tablespoon over salmon
  • Season with Italian seasoning, garlic powder, salt & pepper
  • Cook in oven at 475 for 10 min then at 400 for 2 min

For the spaghetti squash:

  • Scrub the squash, puncture holes in it, put in microwave for 9 minutes
  • Cut in half, scoop out spaghetti like you would a pumpkin, throw away seeds
  • Heat spaghetti in a pot with favorite pasta sauce…I used Rao’s Arribbiata for a spicy kick

  • Throw in spinach, zucchini and mushrooms

  • Cover for 2 minutes on low
  • Serve, sprinkle Parmesan cheese and red pepper flakes and enjoy!

Just like with any Italian feast, you’ll be able to feed at least 3 people with 1 spaghetti squash!  This plate is loaded with healthy fats and protein!

WTFood Hawaiian Mahi Mahi Sandwich

I saw my friend eating a salmon sandwich yesterday and it inspired me to make myself something similar tonight for dinner.  The fish took 12 minutes to cook in the oven, which was super fast.  It was delicious….made me daydream about laying out on Hawaiian beaches……

- Cook fish & mushrooms in oven for 10 minutes at 475 and 2 minutes at 400 with Earth & Vine Provisions Papaya Chipotle Pineapple Vinaigrette (from Whole Foods)

-Toast 2 Ezekiel sprouted bread slices (low sodium)

-Layer a bed of spinach on bread slice, place fish & mushrooms, top with the 2nd slice of bread and eat!

It’s low-calorie, super high in protein, and deliciously tangy!

WTFood Healthy Broccoli Asparagus Soup

Feeling a head cold coming on, so I decided to make some soup.  Took 10 minutes….super easy and super healthy!  Broccoli and asparagus are high satiety foods that will keep you full for a longer period of time when compared to other veggies.

  • Steam 1 cup of frozen or fresh broccoli and 5 asparagus spears

  • Pour into blender with 1/2 cup of the water used to steam the veggies
  • Add 1/4 cup of vanilla almond milk
  • Add a pinch of garlic, salt, pepper and Italian seasoning
  • Blend and enjoy!

Calories: 57 ~ Fat: 1g ~ Carbs: 11g ~ Fiber: 4g ~ Protein: 6g

WTFuel Trojan Pep Talk Monday

In case you’ve hit a few obstacles lately….

In life we are going to hit lots of roadblocks (duh!).  If we were all salesmen, we’d get 9 “no’s” before we’d get to that Yes.  But that doesn’t mean we stop trying or give up.  If it were easy, everyone would be doing it.  Life will have it’s up’s and, of course, it’s downs, but stay optimistic.  It’s easy to get discouraged—it’s human nature.  But, what separates the winners from the losers is that the winners get back up, keep going and persevere.

Over the past few weeks, I’ve been faced with some “no’s” and obstacles.  None too serious or life changing, but enough to stir anger and emotions inside.  As I reflected on my time here at USC, I got to thinking that life is very much like a Trojan Football game.  People always hate on the best for their own insecurities.  But don’t listen to those people and those naysayers.  Don’t let them get into your head.  Trojans don’t take no for an answer.  Absolutely not.  No way we don’t.  We accept our situation and figure out another play to move ahead.  We are Trojans and we fight.  We fight hard and we fight on.

We’re going to face adversity, but we don’t quit.  Trojans are not quitters.  We are winners.  People are going to try to sack us and push us back.  And yea…we’ll be sacked a few times and come short of a first down.  But quarterbacks don’t let that get to them.  They stand back up, dust the dirt off, and put their game face back on and focus.  Fail forward.

Realize that you are your own quarterback in this game called life.  You call the shots, but you can’t do it all yourself—you need the help of others and the synergy of a great support team.  When you’re feeling down, you have a whole force behind you rooting you on.  Listen to their pep talk.  Psych yourself up.  And walk back out onto that field with your head up, ready for the next play.

WTFood Snack Attack

I’ve been a snacker these days and my latest obsession has been cashew butter!  Today, I opted for a fresh creation….Cashew Butter & Fresh Blueberries on Ezekiel toast!

It’s a great snack, tastes so yummy and keeps you full for a couple of hours!  Takes less than 5 minutes to make!  Lather 2 tablespoons of cashew butter on toasted bread, put back into toaster oven for a minute to heat the butter, take out, add fresh blueberries & enjoy!  The blueberries start to melt with the warm butter making this treat taste too good to be true!

WTFuel: What the Hype! Entrepreneur Spotlight: Tim Sae Koo

So so proud of my good friend, Tim Sae Koo and his graphic designer, Eunice Noh, and business partner, Willy Wang for officially launching their start-up, Hypemarks yesterday.  Tim has been working hard for over a year on this start-up and I’m so excited to see his concept come to fruition.  I remember sitting next to Tim in our Entrepreneurship intro class 3 semesters ago when he told me he had a concept brewing in his head.  Since then, he has brought together a great start-up team, spent weeks at two different incubators, and graduated early in December.

Only hearing bits and pieces of the site concept every few months, I’ve been on the sideline rooting for Tim and hearing about the progress along the way.  Tim is living proof that execution is everything….you can read about his entrepreneurial journey here!

So what is Hypemarks, anyways?!  It’s a social media site where you share your favorite websites and bookmarks with your friends.  Think of Pinterest, but with sites and articles.  So instead of backing up everyone’s news feeds on Facebook, you can “hype” away on Hypemarks!  You have to have a Facebook friend already in the hype in order to sign up.  But, it’s worth it…no extra logins or passwords!  So what are you waiting for…go join in on the hype and explore!  The more friends, the merrier! :)
